- 220 g (1 cup) frozen mixed berries
Chia Pudding Layer
- 250ml (1 cup) unsweetened coconut milk (carton variety)
- 2 tbs desiccated (shredded) coconut
- 3 tbs chia seeds
- 2 tsp stevia
Put all the ingredients for the chia pudding in a mixing bowl and stir well to combine. Cover with plastic wrap and leave to set in the fridge for 3 to 4 hours or, better yet, overnight.
Roughly chop the mixed berries and mash with a fork. Put the berries as the base layer at the bottom of two jars (or glasses). Spoon the chia pudding over the base layer.
Blend the frozen acai berries in a food processor or blender and layer over the chia pudding.
Garnish with your desired toppings. Try millet puffs, desiccated or shredded coconut, fresh blueberries and mint leaves.
