Zoe Bingley-Pullin’s Coriander Beef with Corn and Mango Salsa

Ingredients

For the salsa

1 mango, peeled, finely chopped

1 corncob, husks removed and cooked 

1/2 small Spanish onion, finely chopped

1/2 avocado, cut into cubes

1/2 punnet of cherry tomatoes, cut into quarters 

1/2 lime, juiced 

2 tsp lime zest 

1 tbsp extra virgin olive oil

1/2 tsp ground cumin

1 garlic clove, crushed

For the coriander beef

300g eye fillet

1/4 cup coriander leaves, finely chopped 

1 tsp Murray River sea salt

1 tsp black pepper, ground

2 tbsp extra virgin olive oil for cooking

Method

Step 1. 

Add all of the salsa ingredients into a large bowl and gently toss before leaving to marinate for 15 minutes.

Step 2.

Season the fillet with some sea salt, pepper before topping with extra virgin olive oil and coriander.

Step 3.

Pre-heat the frying pan on medium heat and add a little olive oil. Then, cook the eye fillet for two to three minutes on each side so that it is medium rare.

Step 4.

Serve the eye fillet with a generous spoonful of mango salsa.
