Gluten-free apricot bliss balls

Send the kids to school with these healthier bliss balls packed with dates, carrots, oats and dried apricot. And don’t forget to save some for yourself, too!

Ingredients

200g dried apricots, coarsely chopped

2 tbsp white chia seeds

125ml fresh orange juice

10 medjool dates, pitted

75g gluten-free rolled oats

70g grated carrot

2 tbsp moist coconut flakes, plus an extra 20g 

Pinch of ground cinnamon

Method

Step 1. 

Combine the apricots, chia seeds and orange juice in a shallow dish. Set aside, stirring occasionally, for 15 minutes to soak.

Step 2.

Transfer the apricot mixture to a food processor. Add the dates, oats, carrot, coconut and cinnamon. Process until finely chopped and evenly combined.

Step 3.

Place the extra coconut on a plate. Roll level tablespoonfuls of the mixture into balls and roll in the coconut. Serve.

MAKE AHEAD

Keep the balls in an airtight container in the fridge for up to 4 days.

FREEZE IT

Batch-freeze the balls in airtight containers for up to 1 month. Thaw in the fridge before eating.

Makes 25. Egg free, dairy free, nut free, sesame free, gluten free, soy free and fish and shellfish free.
