Glazed ham with cloves and cherries

This glazed ham tastes amazing and will look gorgeous on your dinner table. Holiday hams are a popular Christmas tradition for good reason – they’re classic, comforting and delicious.

Ingredients

  • 2 kg boneless gammon joint, soaked overnight in cold water
  • 2 litres cherry cola
  • 40 cloves
  • 4 tbsp cherry jam
  • 1 orange, juiced and zest finely grated
  • 1 tbsp English mustard
  • fresh cherries, to garnish

Method

Step 1.
Drain the gammon and put it in a snuggly fitting saucepan. Pour over the cherry cola, topping it up with water if the ham isn’t fully submerged.

Step 2.
Bring the pan to the boil, then reduce the heat, partially cover the pan with a lid and leave to simmer gently for 2 hours. If the liquid level gets too low, top it up with boiling water.

Step 3.
Towards the end of the cooking time, preheat the oven to 230°C (210° fan) and line a roasting tin with greaseproof paper.

Step 4.
Put the cherry jam, orange juice, zest and mustard in a small saucepan. Stir over a medium heat until it starts to boil, then simmer for 3 minutes to form a thick glaze.

Step 5.
When the ham is ready, transfer it to the roasting tin and carefully slice away the rind, leaving most of the fat intact. Score the fat in a diamond pattern, then stud the centre of each diamond with a clove. Sieve the glaze onto the ham to remove any pieces of cherry or orange zest and use a pastry brush to coat the whole surface.

Step 6.
Roast the ham for 15 minutes or until the glaze is glossy and brown. Serve the ham hot or at room temperature, garnished with fresh cherries.
