Better Together Kitchen’s smoked salmon carpaccio

Ingredients

  • 400 g good quality smoked salmon 
  • 3 radishes, finely sliced 
  • ¼ cup picked dill fronds 
  • 100 g goat cheese (4 Meredith cubes) 
  • 10 caperberries, (any big ones sliced in half)
  • ¼ red onion, finely sliced and pickled for 10 minutes in apple cider vinegar 

For the dressing:

  • zest of 1 lemon 
  • 1 tbsp lemon juice 
  • 1 tbsp olive oil

Method

Step 1.

Lay the salmon out on a flat platter.

Scatter over radish, dill, goat cheese, caperberries and red onion. 

Step 2.

Whisk dressing ingredients together and drizzle over salmon. 

Step 3.

Serve with crackers and bread.
