Steak sandwich with spinach and blue cheese

A juicy steak sandwich is hard to beat, so this recipe puts a tasty twist on the traditional version. Rich in high-quality protein, beef also helps grow and maintain muscle mass.

Ingredients

  • 600 g beef fillet
  • 2 tbsp vegetable oil
  • salt
  • freshly ground black pepper
  • 100 g blue cheese; e.g. Roquefort
  • 2 cloves garlic
  • 6 tbsp mayonnaise
  • 2 tbsp Greek yoghurt
  • 1 tsp lemon juice; or to taste
  • 4 baguette rolls; or 1 small baguette
  • 1/2 handful lettuce; e.g. iceberg lettuce
  • 1 handful baby spinach

Method

Step 1.
Allow the beef fillet to come to room temperature. Preheat the oven to 120°C, gas 1.

Step 2.
Add the oil to an ovenproof frying pan and heat over a high heat. Add the beef and brown it well on all sides.

Step 3.
Season with salt and pepper, transfer to the oven and cook for 20-25 minutes, or until cooked to your liking.

Step 4.
Meanwhile, crumble the blue cheese into a bowl. Peel and roughly chop the garlic. Purée the garlic in a blender with the mayonnaise, yoghurt and lemon juice, season with salt and pepper and season to taste.

Step 5.
Remove the meat from the oven and leave to rest for about 5 minutes.

Step 6.
Cut the baguette rolls in half horizontally, spread both halves with the garlic mayonnaise and cover the bottom halves with lettuce leaves.

Step 7.
Cut the beef fillet into 4 steaks, place one on each roll and sprinkle with blue cheese. Top with the spinach and replace the top halves of the rolls.
