Savoury pumpkin, sage and walnut crumble:

Serves: 4 | Prep time: 15 mins | Cook time: 40 mins


  • 600 g pumpkin (before peeling), skin and seeds removed and cut into 2-3cm chunks
  • 1 small onion, thinly sliced
  • ¼ cup extra-virgin olive oil
  • 2 slices wholemeal or sourdough bread
  • ½ cup rolled oats
  • pinch of cayenne pepper
  • 1/3 cup grated Parmesan cheese
  • ½  cup walnuts, roughly chopped
  • 2 tbsp sage leaves, finely chopped


Step 1.

Preheat oven to 200°C.

Step 2.

Place pumpkin and onion in a small-medium, oiled baking dish and drizzle with half the oil.

Roast for 30-35 minutes or until pumpkin is soft and golden brown.

Step 3.

Meanwhile, place bread and oats in a food processor and process to coarse crumbs.

Step 4.

Transfer the breadcrumb mixture to a bowl and stir through the cayenne pepper, Parmesan and remaining oil.

Add the walnuts and mix to combine.

Step 5.

Top the pumpkin with the sage and the breadcrumb mixture and bake for 10-15 minutes or until golden brown.
