Simple Baked Fish with Greens

Regularly eating fish can help prevent a multitude of ailments, so up your intake with this quick and easy trout recipe, served with in-season snow peas and beans.

Ingredients

  • 4 trout fillets, roughly 175g each
  • 4 tbs olive oil
  • 1 red chilli, deseeded, finely chopped
  • 250g (2 cups) round beans, trimmed
  • 225g (2 cups) snow peas

Method

Step 1.
Preheat the oven to 180C (350F). Cut out four 30cm x 30cm squares of greaseproof paper.

Step 2.
Arrange the trout fillets in the middle of the paper squares and season with salt and pepper. Stir together 2 tablespoons olive oil with the chopped chilli in a small bowl before spooning over the trout.

Step 3.
Bring the edges of the paper up and over the trout, scrunching together to form parcels. Arrange between two baking trays. Bake the fish for about 15 minutes until firm to the touch and opaque in appearance.

Step 4.
Meanwhile, toss the beans and snow peas with the remaining olive oil and some salt and pepper on a rimmed baking tray.

Step 5.
Once cooked, remove fish parcels from the oven and let cool to one side. Place the greens in the oven and roast for about 4-6 minutes or until just tender.

Step 6.
Remove greens from the oven and serve alongside opened fish parcels.
