- 3 tbs balsamic vinegar
- 1 1/2 tsp honey
- 100ml olive oil
- 2 tbs almonds, finely chopped
- 2 tbs cashews, chopped
- 200g (8 cups) rocket, washed
- 250g (1 cup) fresh buffalo mozzarella, drained, chopped
- 150g (1 cup) strawberries, hulled, quartered
- Salt and black pepper
Whisk together the balsamic vinegar and honey in a mixing bowl with some salt and pepper to taste.
Gradually whisk in the olive oil in a slow, steady stream until incorporated. Stir in chopped almonds and cashews.
Arrange the rocket on serving plates and top with the mozzarella and strawberries. Spoon over the dressing and serve immediately.
