Cashew, Mozzarella and Strawberry Salad

Bursting with fresh berries, crunchy cashews and melt-in-the-mouth mozzarella, this fruity summer salad is the perfect side dish or light dinner.


  • 3 tbs balsamic vinegar
  • 1 1/2 tsp honey
  • 100ml olive oil
  • 2 tbs almonds, finely chopped
  • 2 tbs cashews, chopped
  • 200g (8 cups) rocket, washed
  • 250g (1 cup) fresh buffalo mozzarella, drained, chopped
  • 150g (1 cup) strawberries, hulled, quartered
  • Salt and black pepper


Step 1.
Whisk together the balsamic vinegar and honey in a mixing bowl with some salt and pepper to taste.

Step 2.
Gradually whisk in the olive oil in a slow, steady stream until incorporated. Stir in chopped almonds and cashews.

Step 3.
Arrange the rocket on serving plates and top with the mozzarella and strawberries. Spoon over the dressing and serve immediately.
