Low-Calorie Caesar Salad

This Caesar salad is packed full of flavour but is low in calories. Try this healthier alternative to an old favourite for an easy mid-week dinner.

Ingredients

  • 2 slices white bread
  • 2 tbs olive oil
  • 2 cos lettuces, sliced into ribbons
  • 1 cooked chicken breast
  • 50g parmesan

For the dressing:

  • 2 tbs light mayonnaise
  • 3 tbs 0% fat Greek yoghurt
  • 1 tbs lemon juice
  • 1/2 tsp Dijon mustard
  • 1/2 clove garlic, crushed
  • 2 fillets anchovy, chopped
  • 2 tbs Parmesan, finely grated

Method

Step 1.
Preheat the oven to 190°C (170 fan). While the oven is heating, brush the bread with oil on both sides then cut off and discard the crusts. Cut the bread into cubes and spread them out on a baking tray. Bake the croutons for 5 – 8 minutes or until crisp and golden. Transfer to a wire rack to cool.

Step 2.
Divide the lettuce, chicken and croutons between four plates. Use a vegetable peeler to shave the parmesan into thin slices over the top of the salads.

Step 3.
Put all of the dressing ingredients in a measuring jug. Use a stick blender to emulsify into a smooth dressing, then drizzle it over the salads. Serve immediately.
