Sally’s One Pot Pasta
When you need to whip up a meal in minutes, turn to this one pot wonder to see you through. It’s versatile, easy to prepare and perfect for using up any leftover veggies from the fridge.
Ingredients
- 1 red capsicum, diced
- 2 tomatoes, diced
- 1 punnet cherry tomatoes, whole
- 1 cup basil leaves, whole
- 1 tbs chopped garlic
- 1 cup mushrooms, quartered
- 2 red onions, diced
- 300g spaghetti
- 4 cups water
- 300g feta (optional)

Method
Step 1.
Place all your ingredients in a pot and cover with water.
Step 2.
Bring to the boil and stir constantly.
Step 3.
As the water evaporates add a generous slug or two of olive oil and heaps of salt and pepper. Add more crushed garlic and dried Italian herbs (if using).
Step 4.
It takes about 10 to 11 minutes to cook. Once it’s ready, top with more basil and add feta (if using). Stir the feta through a little to make the dish creamy.
