Coconut Protein Bliss Balls

Bump up your protein intake with these hunger-busting bliss balls from Bondi Protein Co. With a hit of coconut and citrus they’re perfect for warm summer days.

Ingredients

  • 2 cups desiccated coconut
  • 2 scoops Bondi Protein Co. Coconut Protein Powder
  • Zest of 1 medium lemon
  • 2 tbsp fresh lemon juice, approx. half a medium lemon
  • 3 tbsp coconut cream, chilled
  • 1 tbsp maple syrup or honey

Method

Step 1.
Line a baking tray with parchment paper, set aside.

Step 2.
Add all ingredients to a high speed food processor.

Step 3.
Process for 30 seconds to 1 minute or until the mixture sticks together and becomes thick.

Step 4.
Pick up approximately 1-2 tablespoons of mixture and roll into balls. Place on lined tray. Repeat with remaining mixture.

Step 5.
Refrigerate for 30 minutes or until firm. Store in an airtight container, refrigerated, for 1 week to 10 days.
