Dessert Protein Waffles

Free of refined sugars and packed with protein, these waffles from Bondi Protein Co can be loaded with fresh fruits for a healthy start to the day.

Ingredients

  • 1 1/3 cup all-purpose flour or gluten free all purpose flour
  • 4 tsp baking powder
  • 1 scoop Bondi Protein Co Vanilla Protein Powder
  • 2 eggs
  • 1/2 cup coconut oil, melted
  • 1 tbsp maple syrup
  • 2 tbsp coconut oil, melted, for greasing waffle maker

Caramelised Bananas + Fried Pears

  • 2 tbsp coconut oil
  • 2 large ripe bananas, sliced in half lengthways
  • 1 small pear, halved

Toppings

  • Fresh strawberries, sliced
  • Strawberry or vanilla ice-cream
  • Maple syrup
  • Cocoa powder

Method

Step 1.
Preheat waffle maker to manufacture’s instructions. In a large mixing bowl, combine flour, baking powder and protein powder. Whisk well. Add in eggs, melted coconut oil and maple syrup. Stir until well combined and no lumps remain.

Step 2.
Once waffle maker is heated, and using a silicone pastry brush, grease both the top and base of the waffle maker with the melted coconut oil.

Step 3.
Pick up a ladle full of the batter (approx. 1 cup) and pour into the centre of the waffle maker (or refer to your waffle maker cooking instructions), spreading it out slightly.

Step 4.
Cook waffle for 5-7 minutes or until completely cooked through, golden and crispy. Gently remove waffle using a plastic spatula and set aside. Repeat with remaining batter.

Caramelised Bananas + Fried Pears

Step 5.
Heat oil in a large fry pan over medium-high heat.

Step 6.
Add sliced bananas and hailed pears to pan, cut side face down, and swirl the coconut oil around the pan so each banana slice and pear is sizzling in oil.

Step 7.
Fry for 2-3 minutes or until golden and caramelised. You don’t have to turn them over. Once fruit is caramelised, place on top of waffles.

Note: You may also caramelise your fruit before you make your waffles. Top waffles with fresh strawberries, ice-cream, maple syrup and a dusting of cocoa powder.

Serves 3-4
