Easy no-bake energy protein balls

These no-bake protein balls make a great guilt-free snack. With no oven needed, they are so easy to make that even the kids can get involved.

Ingredients

  • 150 g Medjool dates
  • 120 g almond kernels
  • 2 tbsp vegan cocoa nibs
  • 2 tbsp freeze-dried strawberries
  • 1 tbsp coconut oil
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 pinch sea salt

Method

Step 1.
Stone and chop the dates.

Step 2.
Blitz 2 tbsp almonds, the cocoa nibs and freeze-dried strawberries in a blender, remove and set aside.

Step 3.
Blend the remaining almonds in the blender until powdery. Add the dates and blend in several batches, adding the coconut oil, 2 tbsp water, ground cinnamon, vanilla extract and sea salt.

Step 4.
Add the chopped almonds, cocoa nibs and strawberries and stir until smooth. If necessary, add a little more water.

Step 5.
Form 12-15 balls from the mixture with your hands, place in paper sweet cases and serve.
