No bake oat and sunflower cookies
Looking for a quick, simple and healthy treat that will keep the whole family happy? Then whip up some of these delicious oat cookies.
Ingredients1 cup oats 1 cup Medjool dates, pitted 1 tsp cinnamon 1 tsp salt flakes ½ cup sunflower seed butter (or nut butter) 50g dark chocolate, melted

MethodStep 1. Place oats, dates, cinnamon and salt in food processor and pulse until crumb like. Add sunflower seed butter and pulse until dough like. If too dry, add 1-2 tablespoons boiling water. Step 2. With damp hands, roll mixture into small balls and then press down into cookie shape, stamping with a fork if desired. Step 3. Drizzle or half dip into melted chocolate and place on a lined tray. Place in freezer to set and store in an airtight container in freezer. Note – if dates are hard, place in boiling water for five minutes to soften before using. Makes 20 biscuits. |
