Recipe: Summer popsicles with blueberries, raspberries and yoghurt
On a scorching summer day, reach for a cool homemade sweet treat that the kids will love devouring.
Ingredients200ml double cream 2 tbsp sugar 1 tsp vanilla extract 125g mixed red berries; e.g. raspberries, red currants 4 tsp honey 350g plain yoghurt 125g blueberries

MethodStep 1. Whip the cream with the sugar and vanilla until stiff. Step 2. Finely puree the red berries in a blender with half the honey, pass through a sieve and mix in 150g yoghurt. Step 3. Fold in half of the whipped cream and pour the red mixture into 4 x 250ml ice-lolly moulds so that they are half-filled. Step 4. Stir 50g yoghurt until creamy and add to the moulds. Step 5. Finely blend the blueberries with the remaining honey in a blender, pass through a sieve, stir in 150g yoghurt and fold in the remaining cream. Fill the moulds with the blueberry mixture and insert paddle sticks. Step 6. Freeze for at least 4 hours until firm. Serves 4. |
