Spicy Broccoli Soup

Spice up your winter nights with this delicious, immune-boosting soup from Sally Obermeder that is packed with greens and oh so easy to prepare.

Ingredients

  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 brown onion, diced
  • 1 small bird’s eye chilli, seeded and chopped
  • 750ml (3 cups) vegetable stock
  • 500g broccoli, chopped
  • Toasted bread, to serve (optional)

Method

Step 1.
Heat the olive oil in a saucepan over medium heat. Add the garlic, onion, and chilli and stir until the onion has softened and the garlic has developed a golden colour. Add the stock to the saucepan, cover and increase the heat to medium-high. Once the stock is boiling, add the broccoli.

Step 2.
Reduce the heat to medium and simmer for about 15 minutes, stirring occasionally, until the broccoli in tender.

Step 3.
Remove the soup from the stovetop. Use a blender or food processor to purée the soup until smooth (or until it reaches the desired consistency). Return to the stove and warm through before serving with toasted bread (if desired).
