Add a splash of supercharged goodness to your day with this quick and easy beetroot hummus. It’s healthy, tasty and sure to impress.
- 4 large beetroot, which have been cleaned and cooked (cook by slicing off the tops and standing them in a dish with about 2cms of water in a hot oven until you can easily pierce them with a knife)
- 400g can of chickpeas, rinsed and drained
- 2 garlic cloves, roughly chopped
- 1 tbsp tahini
- Dash of lemon juice
- 2 tbsp olive oil
- Salt and pepper
Process all ingredients in a food processor until smooth.
Serve up with pita chips, Turkish bread, or cucumber and carrot sticks.
