Red lentil salad with apple, feta and rocket

This quick and easy salad is just bursting with goodness. Red lentils are high in fibre and a great vegan source of protein. They also contain folate, so they are great for pregnant and breastfeeding mothers.


  • 120 g red lentils
  • 400 ml orange juice
  • salt
  • 4 sprigs fresh thyme
  • 300 g small vine tomatoes
  • 120 g feta
  • 2 red apples
  • freshly ground black pepper
  • 50 g walnut halves
  • 100 g rocket

For the dressing

  • 4 tbsp cider vinegar
  • 1 tsp mustard
  • 50 ml olive oil


Step 1.
Rinse the red lentils in a sieve then place in a pan with the orange juice and a little salt. Bring to the boil and cook gently for about 20 minutes until tender with a slight “bite”. Drain in a sieve and leave to cool.

Step 2.
Chop the thyme. Halve or quarter the tomatoes, depending on their size. Crumble the feta.

Step 3.
Whisk the vinegar with the mustard and olive oil to make the dressing. Halve and core the apples, then dice and mix with the dressing and lentils. Season with salt and pepper.

Step 4.
Roughly chop the walnuts and add to the lentil mixture along with the rest of the ingredients. Gently fold together. Serve immediately.
