If you take a quick look into your fridge, there’s a high chance that you’ve already got some chicken breast at hand.

This lean meat lends itself to a variety of dishes and Zoe’s flavour-packed BBQ cumin chicken breast dish is sure to become one of your go-to easy weeknight dinners.

Zoe Bingley-Pullin’s BBQ Cumin Chicken Breast with Corn and Tomato Salsa Wraps

Ingredients

For the chicken

2 x 150g chicken breast, without the skin

2 tbsp of olive oil

1 tsp cumin powder

1 garlic clove, crushed

For the salsa

2 fresh corn cobs, with the corn cut off the cob

2 Truss tomatoes, cubed

½ Spanish onion, diced

2 tbsp coriander, chopped

1 lime, juiced

1 tbsp lime zest

1 tsp honey

Rocket leaves, to serve

Wholemeal wraps or multigrain bread

Method

Step 1. 

Thoroughly mix all the ingredients for the chicken in a bowl and leave to marinate for 15 minutes.

Step 2. 

Place all of the salsa ingredients in another bowl before mixing thoroughly. Then, leave to marinate for 10 minutes.

Step 3.

Preheat a barbecue or griddle pan to high heat and cook the chicken breast for four to five minutes on each side.

Step 4.

Cut the chicken into bite sized pieces and spoon onto the wrap. Next, add a small handful of rocket on top alongside two to three tablespoons of the salsa and serve.
