Get Nourished recipe: Brazilian beef for a hearty tastebud trip

This week on Get Nourished, Zoe Bingley-Pullin takes your tastebuds on a trip to South America with her healthy Brazilian Hot Beef recipe.

This time, Zoe’s recipe is taking you to Brazil, with a sizzling South American-inspired dish of lean, grass-fed beef marinated in punchy spices and tenderised with the sweetened taste of coconut milk and tomato paste, as well as some curry powder and ginger to bring the heat.

The lean grass-fed beef is also rich in protein, vitamins and minerals making it a healthy option for your weekend grilling while the sautéed vegetables add a hit of caramelised goodness to pull the dish altogether.

Zoe Bingley-Pullin’s Brazilian Hot Beef

Ingredients

1/4 cup coconut milk

2 tbsp tomato paste

3 garlic cloves, crushed

1 tbsp ground ginger

4-6 tbsp curry powder 

Sea salt and pepper, to taste

750g lean grass-fed beef, cubed

1 Spanish onion, thinly sliced into rounds

2 red capsicums, cut into strips

1 tbsp extra virgin coconut oil 

Parsley for serving

 

Method

Step 1. 

Whisk together coconut milk, tomato paste, garlic, ginger, curry powder, salt and pepper in a bowl. Add the beef and leave to marinate for 10 to 20 minutes.

Step 2. 

Heat coconut oil in a frypan then sauté the onion and capsicums for five to 10 minutes, making sure to season well. Once tender, transfer to a bowl and keep warm. 

Step 3.

Using a griddle pan or a barbecue, cook the beef for three to five minutes on each side.

Step 4.

Serve the beef on a bed of the onion and capsicum mixture, and finish with a sprinkle of parsley on top.
