Grilled lobster tails with mango-ginger salsa and mint

Entertain friends and family at your next barbecue with this unbelievably simple seafood delicacy, packed with a kick of lime and sweet mango.

Ingredients

For the salsa:

2 mangoes

1 orange pepper

1 red pepper

1/2 cucumber

1 red onion

1 lime; zest and juice

salt

1 pinch sugar

cayenne pepper

1 tsp freshly grated ginger

4 tbsp olive oil

2 sprigs mint

For the lobster:

4 fresh lobster tails

salt

50g melted butter

1/2 tsp chilli flakes

micro herbs; to garnish

Method

Step 1.

For the salsa, peel the mangoes, remove the flesh from the stone and finely dice. Clean and finely dice the peppers.

Step 2.

Halve the cucumber lengthways, remove the seeds and cut into small cubes. Peel and finely dice the onion.

Step 3. 

Put everything in a bowl with the zest and juice of the lime. Mix with salt, sugar, cayenne pepper, ginger and olive oil to taste. Slice the mint and add to the salsa.

Step 4. 

Halve the lobster tails, clean and season with a little salt. Grill under a hot grill on the shell side for about 6 minutes, then turn and cook for 1-2 minutes. Remove from the grill, season the butter with salt and chilli flakes and brush over the lobster meat.

Step 5. 

Arrange the salsa on plates and place 2 lobster halves on each. Garnish with micro herbs and serve.

Serves 4.
