Mini burgers with chicken, sun-dried tomatoes and mozzarella

These quick snacks are easy to make in batches, the perfect recipe for entertaining if you’re hosting a house party for family and friends.

Ingredients

1 shallot

40g sun-dried tomatoes

1 red chilli

350g minced chicken breast

1 egg

salt

freshly ground black pepper

ground paprika

3 tbsp breadcrumbs

1 tbsp plain flour

3 tbsp milk

1 tbsp vegetable oil

150g mozzarella

16 mini brioche buns; with sesame seeds

70g mango chutney

16 basil leaves

Method

Step 1. 

Preheat the grill to high. Peel the shallot and chop finely with the sun-dried tomatoes. Finely dice the chilli. Put the minced chicken in a bowl and mix with the egg, shallot, tomatoes and chilli. Add salt, pepper, paprika, breadcrumbs, flour and milk. Mix everything together until well combined, adding a little more milk or breadcrumbs if necessary.

Step 2.

Brush a baking sheet with oil. Shape the mince mixture into 16 mini burgers. Place on the sheet and grill for 12-15 minutes, turning halfway through, until golden and cooked through.

Step 3.

Cut the mozzarella into slices. Halve the mini brioche buns horizontally. Spread the chutney on the bottom halves, place a slice of mozzarella on each and toast the buns briefly under the grill until the mozzarella starts to melt.

Step 4.

Place a mini burger on each and top with a basil leaf. Toast the top halves of the buns on the grill for one minute if desired, place on top and secure with bamboo skewers. Serve the mini burgers with the remaining mango chutney.

Serves 16.
