Stuffed picnic loaf

This delicious loaf is sure to be a crowd-pleaser at any picnic or gathering, ideal for a great time out with family and friends this summer.


1 round crusty loaf; wholemeal if desired

1 handful rocket

2 sprigs mint

1 clove garlic

4 tbsp olive oil

1-2 tbsp lemon juice


freshly ground black pepper

150g artichoke hearts

2 tomatoes

125g mozzarella ball

1/4 iceberg lettuce

150g cooked ham; in slices

150g salami; in slices


Step 1.

Cut a lid off the bread and scoop out the soft inside, leaving a 2-3 cm thick edge all around.

Step 2.

Purée the rocket and mint in a food processor with the peeled garlic, oil and lemon juice. Season with salt and pepper. Spread the pesto all around the inside of the loaf.

Step 3.

Drain and chop the artichokes then Slice the tomatoes. Drain the mozzarella and cut into thin slices. Wash the lettuce, shake dry and tear into pieces.

Step 4.

Fill the bread with layers of the lettuce, ham, tomatoes, salami, cheese and artichokes. Re-seal with the lid, wrap well and chill for at least 1 hour before serving.

Makes 1 loaf.
