Fruit ice lollies
Keep the kids (and yourself) happy on sunny days, with these simple icy fruit poles – they’re a quick fix to beat the heat.
IngredientsFor tropical smoothie: 3/4 cup of pineapple juice 1 banana 1 cup frozen mango 1 cup frozen pineapple For berry smoothie: 1 cup of apple juice 1 banana 1 cup frozen mango 1 1/2 cups frozen mixed berries For green fruit smoothie: 1 cup of apple juice 2 peeled kiwi fruit 2 cups baby spinach leaves 1 1/2 cups frozen pineapple chunks For stack of fruit ice lollies: 250 ml berry smoothie 250 ml tropical smoothie 250 ml green fruit smoothie |
MethodStep 1. For tropical smoothie, add the pineapple juice, banana, mango and pineapple in a blender, blend until completely smooth. Step 2. For berry smoothie, add the apple juice, banana, frozen mixed berries in a blender, blend until completely smooth. Step 3. For green fruit smoothie, add the apple juice, kiwi fruit, frozen pineapple chunks, baby spinach leaves in a blender, blend until completely smooth. Step 4. To make single flavour fruit lollies, use each smoothie to fill four holes of a 12-hole ice lolly mould. Insert lolly sticks according to the manufacturer’s instructions. Step 5. Freeze for at least 6 hours or until solid before un-moulding. Step 6. To make dual flavour lollies, half fill the moulds with one type of smoothie and freeze for 4 hours without adding lolly sticks. Add a contrasting coloured smoothie, insert the sticks and freeze for a further 3 hours. Step 7. If you prefer, you can make your own smoothies by blending your chosen fruits with an equal volume of white grape juice. For 12 lollies.
