Homemade yoghurt berry ice-blocks

Beat the heat this summer with these creamy, delicious frozen homemade treats. They’re so tasty, you won’t even miss ice-cream.

Ingredients

250g mixed berries; e.g. raspberries, blueberries, blackberries

400g plain yoghurt

3 tbsp lemon juice

2-3 tsp icing sugar

 

Method

Step 1.

Gently wash the berries (if necessary) and pat dry. 

Step 2. 

Stir together the yoghurt, lemon juice and sugar until smooth. 

Step 3. 

Stir in the berries and pour or spoon the mixture into 8 ice-lolly moulds. Put the lids on and push the lolly sticks through the opening into the ice cream mixture.

Step 4. 

Freeze the lollies for at least 3 hours until firm.

Makes 8.
