Kale and cress smoothie with ginger and pineapple

This refreshing, yet simple, blend of green goodness comes packed with nutrition and immune-boosting ginger, ideal for mild weather.

Ingredients

150g kale

1 handful cress; plus extra to garnish

300g pineapple flesh

2cm root ginger

1 lime; juiced

sparkling mineral water

Method

Step 1. 

Wash the kale and remove the hard stems. Rinse the cress, shake dry and drain on kitchen paper.

Step 2.

Roughly dice the pineapple. Peel and finely grate the ginger.

Step 3.

Blend the kale, cress, pineapple and ginger with the lime juice in a blender until smooth. 

Step 4.

Divide between 4 glasses (approx. 300ml), top up with sparkling water and serve garnished with cress.

Serves 4.
