Recipe: Citrus fruit salad with fennel

Add some zing to your fruit salad with this deliciously fresh flavour combination of fennel and citrus. 


1 lemon

1 lime

1 grapefruit

2 oranges

2 blood oranges

150g baby spinach

1 head fennel

30g pine nuts

2 tsp black sesame seeds

1 tub cress

4 tbsp olive oil

4 tbsp white balsamic vinegar

sea salt



Step 1. 

Peel the citrus fruits, removing the white pith, and cut into slices. Rinse and dry the spinach. Quarter the fennel and cut into thin slices. 

Step 2.

Arrange all the prepared ingredients decoratively in bowls and sprinkle with pine nuts, sesame seeds and cress. 

Step 3.

Drizzle with oil and vinegar and season with sea salt.

Serves 4.
