Salmon Rolls

For lunch with a gourmet feel, try these tasty rolls. The salmon is packed with omega-3 fatty acids which can reduce inflammation and lower blood pressure.


  • 1/2 cucumber, halved lengthways
  • 4 medium tomatoes, halved
  • 1 red onion, finely chopped
  • 2 tbsp coriander leaves, chopped
  • 1 lemon, half juiced, half cut into wedges to serve
  • 4 bread rolls
  • 3 tbsp mayonnaise
  • 150 g hot-smoked salmon, broken into large flakes
  • salt
  • freshly ground black pepper


Step 1.
Use a teaspoon to scrape out the seeds from the cucumber and tomato, then cut the flesh into a small dice. Stir in the onion and coriander, then toss with the lemon juice and a big pinch of salt.

Step 2.
Slice into the top of each roll and spread the inside with mayonnaise. Spoon in some of the chopped salad and top with salmon.

Step 3.
Season with plenty of freshly ground black pepper and serve the rest of the salad on the side with some lemon wedges.
