Get Nourished recipes: Dark chocolate treats for better sleep

This week on Get Nourished, Luke Hines and Zoe Bingley-Pullin dish up the perfect dark chocolate treats for a pre-bedtime snack to help with better sleep.

Luke Hines’ Chocolate Bedtime Bark

Ingredients

2 cups dark chocolate, melted

1/4 cup toasted pistachios

1/4 cup toasted macadamias, each cut in half

1/4 cup toasted coconut flakes

1/4 cup dried blueberries

Method

Step 1. 

Melt the chocolate until lovely and smooth, then allow it to cool slightly to thicken. 

Step 2.

Line a small flat tray with baking paper. Pour the chocolate onto the tray, ideally filling right to the edges if the tray is small enough. Scatter the nuts, coconut and blueberries all over the chocolate.

Step 3.

Transfer the tray to the fridge for the chocolate to set firm, locking in all of your toppings.

Step 4.

Break the chocolate into shards and enjoy.

Zoe Bingley-Pullin’s Dark Chocolate Dried Fruit 

Ingredients

10-12 dried figs/apricots/cherries or strawberries

150g dark chocolate (70-90% cocoa), broken into pieces

1/2 cup coconut cream

1/2 cup almond flakes

Method

Step 1.

Place chocolate in a heatproof bowl over a saucepan of simmering water (or melt in the microwave), and stir in coconut cream.

Step 2.

Pick up a fig or your other dried fruit of choice using a skewer and dip into the chocolate mixture before rolling in almond flakes.

Step 3.

Place on a tray lined with baking paper, and repeat this with the remaining figs.

Step 4.

Transfer the figs to the fridge until they are set.
