Get Nourished recipes: Delicious snacks for a vitamin B12 boost

This week on Get Nourished, Luke Hines and Zoe Bingley-Pullin are adding a fun vitamin B12 twist to your favourite quick and easy snacks. 

Healthy eating is all about getting the right amount of nutrients,  including vitamin B12.

Responsible for supporting energy production and maintaining the nervous system function, vitamin B12 is naturally found in foods of animal origin.

However, the risk for deficiency can grow with a plant-based diet and as you age because of the body’s decreasing ability to absorb vitamin B12 from food.

Luke’s tuna tacos add a fun vitamin twist to the popular Mexican dish, topped with a healthy dose of avocados and a splash of lime.

Zoe’s delicious spread of curried egg on sourdough is perfect for those looking for a bit of spice, garnished with rich and fresh micro herbs. 

Try these fun and quick recipes for a healthy vitamin B12 boost by Luke Hines and Zoe Bingley-Pullin, as seen on Get Nourished on The House of Wellness TV show.

Luke Hines’ Tuna Tacos

Ingredients

6 corn taco shells 

2 x 125g boxes of yellowfin tuna slices in olive oil

2 avocados, diced into small squares, in a bowl with some lemon or lime juice

1 small can of sweet corn kernels, drained

1 red tomato, finely diced

1/4 red onion, finely diced 

1 bunch fresh coriander 

1 tsp dried chilli flakes 

1 lime, quartered 

Method

Step 1. 

Get started by placing your taco shells face up so you can load them with all of your toppings. 

Step 2.

Start with a bed of the diced avocado, followed by some slices of the tuna. Then, continue adding the remaining toppings.

Step 3.

Garnish with the coriander, dried chilli flakes and finish with a generous squeeze of lime juice. Dig in and enjoy. 

Zoe Bingley-Pullin’s Curried Egg and Coriander on Sourdough

Ingredients

2 boiled eggs, cooled and peeled

1/2 tsp lemon

1-2 tbsp coconut yoghurt 

1 tsp curry powder, adjust to suit 

2 tbsp coriander, washed, roughly chopped

Salt and pepper, to taste

1-2 slices sourdough, toasted

Fresh micro herbs

Method

Step 1.

Mix the eggs, yoghurt, curry powder, coriander, lemon, salt and pepper together in a bowl.

Step 2.

Spread the egg mixture on top of the sourdough and finish with some micro herbs.
